I really appreciate this point about how traditional recipes encourage people to totally turn off their brains. I think this is why I have so much trouble following them.
Obviously, recipes are good tools for cooks and makers to market themselves and monetize their skills. It's much easier to sell someone an attractive and novel recipe than to teach them the basics of household kitchen management. But cooking becomes so much more rewarding when you think about using ingredients, as Helen says, over the course of many days. Like, what do you do with the whole bunch of parsley? So many great book recommendations, too. Damn, what a legend...
